Passover
Orange Tomato Soup
A Kosher, Italian style soup to warm your appetite for
the other courses of your Passover meal.
Time: 20 min
Serves: 8
Ingredients
3 White onions - medium, cut into thick strips
A Sweet potato - large, cut into 4 large pieces
4 Carrots - cut in half
8 Tomatoes - peeled
10-8 No. Garlic
Thyme - leaves from several stems
Basil - leaves from two stems
250 cc (1/4 cup) Heavy cream
Salt - to taste
Sugar - to taste - to balance the sourness
Black pepper - to taste Directions
Fry the onions in a pot with some olive oil until golden.
Add the carrots and potatoes, stir lightly.
Add the tomatoes, sugar, salt, pepper, herbs and garlic. Add
water and cook until carrots and sweet potatoes are well
softened.
Blend everything with a blender or Food Processor.
Stir in the cream.
Check the seasonings and if the soup looks too thick - add
more water and adjust seasoning.
Serve Hot with a tablespoon of soft goat cheese and
croutons in a soup tureen.
