Passover Coconut Cookies
Ingredients
10 egg whites
1.5 cups of sugar
1 teaspoon vanilla extract
1.5 teaspoon freshly squeezed lemon juice
4 cups shredded coconut Directions
Hold a pot on another pot of boiling water - double
boiler method.
Add the egg yolks with sugar and lemon juice in the pot and
stir until dissolved.
Add the coconut and vanilla and stir and cook about 8
minutes.
Spoon cookies on baking paper a distance of about 2 cm from
each other.
Bake for about 20 minutes or until golden.
