Layered Matzo and Peach Pudding
Ingredients
4 slices old matzo bread
1 can peaches in syrup (580 ml)
2 dl white custard
125 ml cream
1 lemon Directions
Tear or cut the matzah into pieces and divide them into
four glasses.
Drizzle 4 tablespoons of the peach syrup
over the bread to wet it well.
Cut the peaches into
small cubes and toss them on the bread.
Grate the
yellow zest of the lemon and stir in the rind into the
custard.
Whip the cream until stiff and fold in with
the custard.
Spread over the glass to cover all
peaches.
Place the glasses in the refrigerator for
least 2 hours to let the flavors develop.
