Mother's Day
Victoria Sandwich
Ingredients:
112g margarine
112g caster sugar
2 eggs
112g self-raising flour
pinch of salt
Directions:
1. Cream together margarine and sugar until light and
fluffy.
2. Beat in eggs one at a time.
3. Fold in sieved flour and salt.
4. Divide mixture between two 61/2in (165mm) or one 81/2in
(200mm) greased sandwich tins.
5. Bake in preheated oven until golden brown.
6. When cooked remove from tins allow to cool on rack and
then sandwich together with desired filling such as jam or
butter icing.
