Mother's Day
Strawberry Tomato Salad
Ingredients:
1 lb firm tomatoes, peeled
salt
pinch of paprika
1 tbsp lemon juice
12 oz firm strawberries, hulled and quartered
2 tbsp salad oil
Garnish
a few whole strawberries
1/2 cucumber, thinly sliced
Directions:
Cut the tomatoes in half and remove the seeds and pulp.
Cut the tomato flesh into thin slices, place in a bowl and
add salt and paprika to taste. Sprinkle with lemon juice;
set aside.
Just before serving, add the strawberries and transfer
the mixture to a serving platter or dish. Drizzle with oil
and garnish with strawberries and cucumber slices.
