Mother's Day
Spring Greens and Strawberry Salad
Ingredients:
Dressing:
4 lard strawberries hulled
2 tablespoons balsamic vinegar
1 tablespoon fresh orange or lemon juice
1 teaspoon sugar
1 tablespoon vegetable oil
4 fresh mint leaves chopped
2 cups fresh strawberries
4 cups mixed salad greens
1/2 cup (2 ounces) crumbled fresh white goat cheese
Directions:
In a blender or food processor puree all dressing
ingredients.
Reserve 4 of strawberries for garnish; hull and slice the
rest.
Toss sliced strawberries with dressing and let sit for
about 15 minutes. Combine strawberry mixture and greens.
Place salad on plates and sprinkle with goat cheese.
Garnish each plate with 1 reserved berry.
A few minutes of marinating in a balsamic dressing
augments the luscious strawberriness of this salad.
