Mother's Day
Cherry Salad
Ingredients:
450g black cherries
1 tbsp olive oil
5 tsp lemon juice
1/2 tsp. tarragon or red wine vinegar
2 tsp. brandy or kirsch
1 tsp finely chopped fresh tarragon
1 tsp finely chopped fresh chervil
1/2 tsp caster sugar
Salt and pepper
Directions:
Stone the cherries and put them in a bowl. Combine the
remaining ingredients in a screw-topped jar. Close the jar
tightly and shake vigorously until well blended. Pour over
the cherries and leave for 1-2 hours.
Serves 4 to 6
