Mother's Day
Asparagus Rolls
Ingredients:
12 thin slices of white or brown bread, crusts removed
50 g butter, softened
12 cold cooked asparagus spears
Salt and pepper
Directions:
Flatten the bread pieces slightly with a rolling pin.
Spread butter. Lay an asparagus spear diagonally across
each slice of bread. Season to taste, then roll up.
Arrange the rolls in a shallow dish, seams underneath.
Cover with cling film until required.
Serves 4
