Candy Apple Pancakes
Ingredients:
1 pancake
1 tbsp creme patissiere (or thick custard)
1 ball of cinnamon ice cream
1 tbsp good caramel sauce
Apple puree
12 eating apples peeled cored chopped
120g unsalted butter
120g caster sugar
good pinch of cinnamon
Method:
For the apple puree melt the butter in a pan and add the
apples sugar and cinnamon.
Cover and cook over a gentle heat until completely soft
then cool.
To assemble place 1 tbsp puree in the centre of the
pancake.
Top with the creme patissiere (or custard) then fold in
the edges of the pancake to form a parcel.
Turn over and heat in a microwave for 20 seconds.
Using a fish slice place on a serving plate dust with
icing sugar then put the ice cream on the side.
Drizzle with caramel sauce.
