Winter Vegsticks
Ingredients:
12 oz(350g) parsnips, peeled
12 oz(350g) carrots, peeled
½ head celery, scrubbed
To garnish:
1 oz(25g) butter
freshly chopped parsley.
1 Cut parsnips, carrots and celery sticks into 3 in ( 7.5
) Strips.
Directions:
To serve now: cook all vegetables in large pan of
boiling salted water 5-7 mins till just tender. Drain. Dot
with butter and sprinkle with parsley.
Freeze: blanch vegetables, in 2 batches for 2 mins
each. Plunge quickly into iced water. Drain When
completely cool, polybag , seal, label. Use within 1 year.
To serve from freezer: cook from frozen in boiling
water 4-5 mins till just tender. Drain. Dot with butter
and sprinkle with parsley.
Microwave: thaw/ cook 18-20 mins on Full Power,
breaking down block gently. Drain Finish as To serve now.
