Snowball truffles

Celebrate Christmas with this sweet and indulgent chocolate recipe; perfect for placing in little satin pouches and giving to your guests as goody bags.

Method: Melt 14oz of dark chocolate in a pan using a bain-marie. Pour in a cup of double cream and stir until smooth. Sprinkle small chunks of cranberry and nuts into the mixture and mix well. Leave to cool for 10 minutes and mould the chocolate mixture into small truffles. Roll the chocolate balls in desiccated coconut, dust with frosting powder and leave to set. There you have it; sweet snowball truffles.

Mini Christmas Pudding Cupcakes

For the sponge: Begin by creaming 9oz butter and 9oz sugar in a bowl until smooth. Add 2 eggs and gradually stir in 9oz of self raising flour, 1oz dried fruit chunks and 3oz cocoa powder. Separate the mixture into cupcake cases and bake in the oven for 20 minutes on 360°F.

For the topping: Here comes the clever part; make your cupcakes look like Christmas puddings by removing the paper cases and cutting the round tops off so they balance on the plate Turn the cakes upside down and decorate with white frosting. Let it drip down the sides and top with two small cherries and bay leaves. How festive!
