Christmas Cocktail
Serves 6
Ingredients:
½ cucumber, peeled, diced
1 tables salt
3 firm tomatoes, skinned
2 celery sticks, chopped
3 oranges
1 honeydew melon or 12 oz (350g) frozen melon balls or
chunks
2 tablesp freshly ground pepper
½ teasp each fresh thyme and basil or small pinch of dried
herbs.
Directions:
1) Spread cucumber dice on a plate Sprinkle with salt.
Leave 30 mins.
2) Quarter tomatoes, remove seeds, cut quarters into three
place in a large bowl. Add celery.
3) Peel and segment 1 orange, add to bowl.
4) Make fresh melon balls or cut into chunks or add frozen
melon to bowl.
5) Whisk 1 teasp grated zest and the juice from the
remaining orange into oil. Pepper herbs.
6) Rinse cucumber and drain well, Add, with dressing, to
other ingredients, Chill.
To serve: divide between 6 coupe dishes.
